memorial weekend...












For Memorial Day weekend Katie was lucky enough to be invited to go camping with a friend up to Williams. She was so excited! (So was I considering Ashlyn was also going to Grandmas house and Cody and I would have a nice QUIET Friday night at home while daddy was at work.)
All was well we had a great time at the zoo on Saturday too!
And on Sunday at church got the dreaded phone call. Katie had been in a quad accident. I really thought that if I packed the ins. card she wouldn't need it. Well needless to say we where all pretty worried. Especially the wonderful people she was with. Which by the way is so good to know that you can be given blessings when you hang out with the right people! So Jason and I headed up to meet them at the Flagstaff hospital to get Katie checked out. And she was fine except for a scraped and bruised shoulder, hip and head. I think she was more shaken up that she was there and we weren't there with her. So now she has a great tale to tell her other friends. But all is well with miss chatterbox now!

5 ingredient dinner

I don't claim to be a great cook, and I probably never will (plus I hate doing dishes). However I do have to feed my family whether I like it or not. I have a few no fail recipes but we're all pretty bored with those, so I have been looking online night and day trying to find some variety of the dinner kind. I thought I would post a few super easy recipes now and then.

So tonight I made Dijon Pork Tenderloin with cream cheese sauce. This uses 5 ingredients and I have made this several times. Its a hit for everyone!

Pork Tenderloin
Dijon mustard ( a few big squirts in a bowl)
Dill seasoning ( sprinkle in a few tsp.)(I love Pampered Chef's)
8 oz Cream cheese
1 cup chicken broth

Brown the Pork in a frying pan until its brown all around, (just a few min.) Save the dirty pan for the sauce later. Mix the Dijon and the dill seasoning, (you could also use rosemary, but I prefer the dill). And spread all over the pork. Now I have tried cooking this different ways I prefer grilling it, but our grill is on its last leg so I roasted it in the oven 300 for an hour and a half (or 170 degrees). You can also broil it.

After its done place on a cutting board with foil over it to rest

Now add to the dirty pan with all the nice crusty bits, 1 cup of broth and bring to a boil. Lower the heat and add cream cheese stirring until smooth and thick. Serve over pork, yum!

Slice the roast and serve with sauce, and a few sides, like sauteed spinach, stuffing, green beans,
whatever...

Too Hotties!

My Mother in law is so funny! She sometimes gets herself in awkward situations and I love hearing about them. On Mothers day we went to her house for dinner along with my brother in law and his girl friend. And my Mother in law proceeded to tell us about the hair cut she just got a few days ago.

She was getting gas at Arco and saw a new hair saloon across the street and thought she'd try it out. Its called Too Hotties haircuts.

Inside it was decorated pretty masculine with a pool table and hot chicks working there, And a "back room". As soon as she walked in she wanted to turn around but then felt dumb if she did so she stayed. On the wall was a big poster that said

Saloon Rules:

1. BE a gentleman

2. Have a good time

3. Leave a good tip!


She said all the girls kept giving her weird looks and the only other customers that came in were men. I wish I had recorded her telling the story, we couldn't stop laughing. And of course the "have a happy ending for 5 dollars" jokes were never ending!
